We use parchment a lot to line cookie sheets, cake pans, and the like. Parchment keeps items from sticking to the pan, and it is much less messy than greasing the pans or spraying them with cooking spray. You can’t use parchment for everything (not than we didn’t try), but it’s the best option most of the time. By the by, when baking cookies in batches, you can use the same parchment multiple times.
