Reconstituting Dried-Out Marzipan and Coloring Marzipan

Marzipan should be stored in the refrigerator, tightly wrapped with plastic wrap and then in a plastic-covered container, but even if you do everything right, marzipan hardens as it ages. To fix it, knead it with a small amount of corn syrup on a surface dusted with confectioners’ sugar.
To color it, put a drop of food coloring on a surface. Touch the drop and then the piece of marzipan with a paring knife so you add the dye a very small amount at a time. Use the heel of your hand to work in the coloring. Use more coloring as necessary. If you are coloring a large amount of marzipan, mix it in a stand mixer using the paddle attachment.
