Ground Roast Rice

This is a great textural addition to many dishes. Simply dry-fry (roast in a dry heavy-based frying pan) some jasmine rice over low heat until each grain is opaque but not coloured. When cool, grind it into a coarse powder in either a mortar with a pestle or, for ease, a spice grinder.
