Weighing in at 100 kg (220 lb), Emmentaler is the largest cheese in the world. The more aged mountain-made cheeses have a darker rind and if you can get the 18-month cheeses from the alpage canton in Bern, this will taste strong and spicy and have fewer holes than the usual versions of this cheese.

It has an almost slightly wet appearance (it sometimes looks like little tears oozing out of the cheese), and a chewy density with a fine nutty texture. Perfect for eating as a table cheese, but also one of the main components for a Swiss fondue. Eat with a lighter-style, refreshing white wine with floral aromas to really bring out the flavours of this delicious cheese.
