These are thin slices of a dried dough made from shrimp and starch, not to be confused with dried shrimp. They are irresistible as appetizers, hors d’oeuvres, and snacks, and are quick and easy to prepare. They make a wonderful garnish for other types of deep-fried appetizers like Fried Wontons and a good accompaniment to soups or porridge. They come in cans or boxes and have a dull, pebbly texture. When they are deep-fried in hot oil, they puff up dramatically and become crisp and brittle, like potato chips. Although they are made from shrimp, they do not have a heavy fish taste, but are light, delicate, and slightly sweet.
