By enclosing the food in a container with a smoky fire, the food is infused with the flavor of the smoke as it cooks. Often the aromatic qualities of the smoke are enhanced with citrus peel, tea leaves, or raw rice (see Smoked Tea Duck). A standard domed outdoor barbecue grill is the perfect piece of equipment for doing this at home.
