Frying Transparent Noodles

When used as a crisp garnish or as a base for a sauced dish, transparent noodles are deep-fried.
  1. Heat 2 cups oil to 325 degrees. Plunge the bundles of noodles into the hot oil.

  2. Within a few seconds the noodles expand to many times their volume. Remove them from the oil before they brown. Drain and serve.
