Known as yellow bean and brown or black bean sauce as well, bean sauce is made from crushed yellow soya beans, mixed to a paste with flour, vinegar, spices and salt. It tastes quite salty, but has a spicy, aromatic flavour. Sold in jars and cans and available in large supermarkets under popular brand names – look in the oriental foods section.
