Truffles, White or Polish

This fragrant truffle (Choiromyces meandriformis) grows in the birch forests of Central Eu-rope, just under the soil or, more rarely, on the surface. It was also commonly found in the environs of Moscow, where, according to Brokgauz and Efron, it used to be hunted with the aid of tame bears. Molokhovets used them to marinate goose rolls (#2648).
