When the frost begins, wring the necks of fattened ducks so that they die immediately, but do not slaughter them in the usual manner. Hang the ducks by their necks on the walls in the ice house without removing their feathers or cleaning them. This method of preserving is very convenient because the ducks are always available and keep well until Christmas without [the expense] of feeding them.

Wild ducks also keep well in the same manner.
