This book calls for quite a bit of chocolate melting and, although it may seem a simple task, it is worth doing it the right way to make sure you get the best results.
The most commonly taught method of melting chocolate is to place the chocolate in a bowl and heat it over a double boiler (a bowl set over a saucepan of simmering water). This works well enough, but it is not my preferred method due to a couple of factors. One is that it is easy to overheat
