Chayote

The fruits and young shoots and roots of this squash are all used and eaten as a vegetable. The young shoots can be boiled and served as asparagus, but it is the fruits that are mainly used. They can be baked or fried, creamed and eaten in desserts and tarts. The colour of the flesh can vary from creamy white to dark green. Peel before use.
  • Low-fat. High in vitamin C.
