Melons are much prized for their sweet, delicate flavour. There are many different varieties, of which the most common are cantaloupe, charentais, honeydew, Ogen, gallia, tiger and watermelon. The different varieties are available all year round, except for watermelon, which is in season only during the summer and early autumn. A ripe melon should yield slightly when pressed around the stem end. Melons are usually eaten as a starter, but they are also delicious in sweet and savoury salads, preserves, ice creams, sorbets and desserts. They combine well with grapefruit.
