Dried peas are a useful part of the store cupboard, particularly as fresh ones have such a short season. They are available in various sizes, colours and shapes, being either whole, split, green, yellow or blue. All need to be soaked overnight before cooking. Whole peas can be used as a side vegetable; split varieties will make excellent purées and yield a good flour that flavours and thickens beautifully.
