A term used when working with powdered gelatine. The gelatine is sprinkled over a specified amount of liquid and left to sit for 4–5 minutes. During this period, the gelatine soaks up the water and becomes ‘spongy’ in texture – hence the name. Gelatine is easier to dissolve if it is sponged before melting.
