Bird’s eye chilies (chili padi) and Thai bird chilies (dragons eye) are fiery buggers (bird’s eye chilies are hotter; usually the smaller the chili the hotter it is) that are relentless with their heat. The closest you will get is a serrano. Habaneros are too hot and relentless. Jalapeno chilies, those that are most readily available, can be used in place of any fresh green chili in this book, but the heat will not be there, and the flavor will be different. Add some ground dried chilies to add back the bite.
