I have not seen nettles sold on market stalls, which means they are not considered very highly in the region and are picked only by those who want to eat them. However, they do appear in cookbooks. One southern French version of nettle soup, called soupe verte, contains garlic and watercress which give a deep green colour and a much better flavour than nettles on their own. They are also eaten as a purée.
