(a) Remove outer leaves. Wash, trim stalks and remove ‘chokes’. Blanch in 8 pints/4.5 litres water with 1 tablespoon/15ml lemon juice for 7 minutes. Cool and drain upside down. Pack in boxes. (b) Remove all green leaves and ‘chokes’. Blanch artichoke hearts for 5 minutes. High Quality Storage Life: 12 months.
