Use green, compact heads with tender stalks 1 in/2.5cm thick or less. Trim stalks and remove outer leaves. Wash well and soak in salt water for 30 minutes (2 teaspoons/10ml salt to 8 pints/4.5 litres water). Wash in fresh water, and cut into sprigs. Blanch 3 minutes (thin stems); 4 minutes (medium stems) 5 minutes (thick stems). Pack into boxes or bags, alternating heads. High Quality Storage Life: 12 months.
