(a) Wipe but do not peel. Stalks may be frozen separately. Pack in bags. (b) Grade and cook in butter for 5 minutes. Allow 3oz/75g butter to 1lb/450g mushrooms. Cool quickly, take off excess fat, and pack in boxes. High Quality Storage Life: (a) 3 months, (b) 2 months.
