Flavourings must be pure for all icings and fillings, and vanilla extract or vanilla sugar should be used when vanilla is needed. Highly spiced foods may develop off-flavours, so spice cakes should not be used for freezing. Chocolate, coffee and fruit cakes freeze very well.
