This is the dry starch or flour of fresh water chestnuts, which is a bright white and feels very smooth, soft and “squeaky” between your fingers, like a fine talc or chalk. It is frequently used in combination with cornstarch to coat foods that are to be first steamed and then deep-fried. The powder cools after steaming into an opaque shell, which when deep-fried becomes golden and delicately crisp.
Water chestnut powder is boxed by Companion brand and widely distributed. Store like any flour, in a cool spot away from light, heat, and moisture.
