Albufera sauce; sauce Albuféra

A rich sauce named after one of Napoleon’s famous generals, the Duke of Albuféra. The sauce is based on Supreme Sauce with Glace De Viande (meat glaze) and red pepper butter added to it. It’s used mainly on Sweetbreads and poultry dishes such as Poularde Albufera, a chicken dish also named after the duke.
