An is the generic term in Japan for sweet pastes made from a variety of legumes combined with sugar. Asuki-an, the most common sweet paste, is made from Asuki Beans and is used in a variety of Japanese sweets. There are two common types of azuki-an; koshi-an, which is a smooth paste, and tsubu-an, which has bits of bean in the paste.
