Herb stew that’s been made for centuries and is often referred to as the Iranian national dish. Along with lamb or beef seasoned with Turmeric, It contains numerous sautéed herbs and greens and either black-eyed peas or kidney beans. Bits of dried limes (See Limes, Dried, Persian) and shambalileh (dried Fenugreek leaves) are added for additional flavor. It’s also seen as khoresh-e gormeh sabzi.
