Molokheya is a leafy green plant, like spinach in appearance but not in taste. Its Latin name is Corchorus olitorius. Vernacular names include Jew’s mallow, jute mallow, and nalta jute. As the last two names suggest, C. olitorius is a source of the crude fiber known either as jute or burlap and was once made into bags called gunny.

In North Africa, especially Egypt, the leaves, fresh, dried, or frozen, are eaten, usually in a soup, which they thicken and color green.
