In an ideal world, the mushrooms here would be fresh porcini or ceps, preferably large, preferably picked by yourself. This is obviously not always possible. Dried will not do, so substitute mature cultivated common mushrooms, known in the trade as flats. (Impress your greengrocer with this arcane terminology.)
