The cooked and frozen at sea North Atlantic prawns with their heads and shells on are amongst the tastiest in the world, with a far better flavour than tiger prawns or anything from hotter parts of the world. The only thing against them is their small size and fiddliness. Buy frozen and leave to defrost at room temperature for an hour before serving. Mayonnaise and lemon wedges are compulsory.
