Bring a large pot of water to the boil and salt it heavily. Drop the squid pieces into the water for 2 minutes maximum, then remove with a spider to a serving dish. Dress while still warm with lemon juice, olive oil, finely chopped chilli and garlic, then lashings of parsley.
