Sirloin Steak

This has never been my favourite cut of beef, and only has great flavour when cooked in a large piece. For four people take 1 kg of boned (but not rolled) sirloin, and trim the fat down to a bare minimum. Season ultra-generously, brush with flavoured oil, and grill for 10 minutes fat side down, then turn and give the other side 5 minutes. Rest over a cool part of the fire for 5 minutes then carve into 1 cm slices across the joint.
