People are always asking me what my preference in ovens is, and it’s hard to give a definitive answer because oven technology is constantly changing. For small apartments or second ovens, I recommend the Breville Smart Oven BOV800XL for its even baking. The smaller Breville Compact Smart Oven BOV650XL is not convection, but is also reported to be perfectly even.
