Parchment is available at cake decorating and baking supply stores and specialty stores in precut rounds, and in supermarkets, in rolls, for lining cake pans and baking sheets. Lining the bottoms of cake pans with parchment enables cakes to release perfectly when unmolding; if left uncoated, parchment helps to remove the bottom crust easily for sponge cakes that will be brushed with syrup. It also makes it easier to remove cookies, scones, or other items from a sheet pan or cookie sheet.
