This 18 by 24½ inch mat (the mat also comes in a smaller size) is the most nonstick surface I have found for rolling pastry, requiring only a light dusting of flour. Alternatively, a canvas pastry cloth rubbed with flour or large overlapping sheets of freezer weight plastic wrap work well.
