Dehydrating is a technique we use a lot at Bentley. It is used to remove moisture from food, without cooking it, and intensifies flavours while adding a new dimension to the texture. This is not a new technique — it has been around for centuries as a means of preserving food, but many modern chefs use it in their cooking.
Dehydrated food can be stored for longer periods of time, which means this technique can be used to prepare food in advance. It is important when dehydrating food that the temperature is high enough so that bacteria does not form, but is low enough so as to not cook the food.
