Plexiglas sheets are convenient flat surfaces on which to place just-dipped confections to crystallize. They are also useful for slabbing ganache, allowing portability as the ganache crystallizes. The size most convenient for confectionery work is 30 by 41 cm by 5 mm/12 by 16 by 3/16 in.
