There are few limits to the confectionery remnants that can be chopped and used as an inclusion in a candy bar. As long as confectionery rework is shelf stable, it can be incorporated into other candies. Many different types of rework can be used as inclusions: hard candy, sponge candy or toffee, nougat, marshmallow, and so on. When using rework inclusions, the confectioner must consider each inclusion in light of its moisture content, hygroscopicity, sensitivity to heat, and tendency to promote fat migration and employ the inclusion accordingly.
