In Florida, smokers built of wooden boxes with several closely spaced removable trays are popular for smoking mullet and other fish. The trays are made with wooden frames fitted around hardware cloth. These trays slide in and out, and can be rotated from top to bottom during the smoking period.

Some of these boxes sit over the source of heat and smoke, and some have the firebox at some distance from the smoker. The latter is usually necessary for cold-smoking. In either case, the design is great for smoking butterflied fish or such small items as shrimp or oysters. Sausages can also be smoked on the trays.
