~ The icy northern oceans of the world produce several varieties of shrimp, generally quite small (70 to 100 per pound). These are most often sold cooked and peeled and are referred to as “bay” or salad shrimp. Harvested mostly from wild sources, they have a more pronounced iodine flavor. They are ideal for salads, cocktails, and sandwiches. The quality of the little bay shrimp is usually quite good, but can vary depending on the source and supplier.
