There are many good things about stuffed vegetables, among them, taste and economy. Stuffed vegetables are also interesting to prepare and are a welcome change from grilled steaks and chops; as an entree smaller casings, such as mushrooms provide, filled with a tasty stuffing make delicious hors d’oeuvres. Among the vegetables that take naturally to stuffing are green peppers. The peppers should have a bright or dark green skin. They should be glossy, firm, and free of blemishes.
