Salad is a dish that has its place at every meal and in all climates. No matter what the plants are, and whatever seasonings and dressings are chosen, a salad always adds a note of gaiety, a feeling of freshness and being close to nature.

In The Physiology of Taste Brillat-Savarin tells us that ‘a salad rejoices the heart’. He might well have added ‘and the palate, the eyes ... and the stomach’.
