Foreword to the First Edition

It is twenty years since I first put the idea of writing this book to our dear now departed master, Urban Dubois, who greatly encouraged me to realize the project. But being engaged on so many other duties it was not until 1898 that, with the collaboration of Monsieur Philéas Gilbert, I began the first stages of the book. Shortly after this, recalled to London for the opening of the Carlton Hotel and kept extremely busy by the organizing of the kitchens of this great hotel, I was forced to put off my writing to a less busy time.
