Evening Tea

When acquaintances gather for friendly conversation that does not last far beyond midnight, a late evening tea instead of a supper may be served by the housewife. The tea table is arranged as follows.
Spread a clean tablecloth on a long dinner table and set a samovar on a small side table at one end. In the middle of the long table place a tall vase filled with fruit, such as apples, pears, oranges, mandarin oranges, and grapes; on each side, place stacks of dessert plates and next to them silver or bone dessert knives.
