Remarks: Freeze ice cream in a narrow, tall pail with a small opening below (vnizu) [the level of the lid containing the cream]* which will allow the water from the melted ice to drain off. Cover the bottom of the pail with chopped ice, sprinkle on some salt, and set the mold in the pail, surrounding it with more ice and salt. A mold for 6 persons will require 3 lbs, or 6 glasses, salt, a mold for 12 persons, 6 lbs salt, and a very large mold will require 7 to 8 lbs salt.

If the pail is rotated by hand, the ice cream will freeze in ¾ of an hour, but if a mechanical crank is used, it will freeze in 10–15 minutes.
