Remarks: In order for Moscow kvass to be successful, the berries must be ripe and fresh; otherwise the kvass will not be tasty. These kvasses are the cheapest and most refreshing drinks in the countryside, where berries cost nothing. It is best to prepare them in carboys, because barrels and kegs sometimes leak. But kvass from raspberries and cultivated strawberries can be made only in tubs or vats with attached covers. And the kegs must always be covered and buried in ice.
