Some Basic Recipes

Though I prefer not to cross-reference subrecipes endlessly, I have grouped in this section some basic recipes that will be referred to later in the book, because they are too long to include in the recipes for the desserts that use them. Where possible, I have attempted to work out a simplified version of some of these preparations that sacrifices none of the flavor of the original, more time-consuming process.
These recipes are some of the most important foundations of authentic Italian desserts and make all the difference between a pedestrian result and one that is particularly fine.
