Cream puff pastry is one of the easiest preparations to master, and it is also well suited to relatively long advance preparation. In Italy, many different types of bignè (puffs) are popular, and often the pastry shops offer several varieties that differ in shape, filling, and decoration. The following variations are easy, flavorful ones whose separate elements may be prepared in advance, then assembled shortly before serving.
