Sugar when called for in the recipes means granulated unless confectioners’ or superfine is specified. I don’t know anything about substituting honey for sugar so I don’t do it. But I do believe in the health-giving properties (even if only mental) of honey, especially Italian chestnut honey. That, I eat by itself as a dessert; and poured over blue cheese, it sings.
