Fish is notorious for not storing well, and it’s true that it won’t last as long as some of the other leftover bases in this book. That doesn’t mean you won’t occasionally find yourself with leftovers–and you shouldn’t just toss them!
For best results, allow your salmon to cool completely to room temperature and then store it in airtight containers. Store the salmon in as large of pieces as possible and keep the skin on the salmon as well. This will help it keep longer. If stored correctly, it should last for 4 to 5 days.
