Not all salads have a lettuce component, but I find that for quick dinner side salads it’s easiest to start with a nice bed of some sort of green. You can buy pre-mixed and pre-washed greens these days, which makes this step incredibly easy, but if you are looking to save some money, buy the greens in bulk. Personally, I rotate between spinach, green leaf lettuce, red leaf lettuce, and kale (diced very finely). If I’m buying something like beets, I’ll wash the green tops of the beets well and use them for greens in salads. I stay away from iceberg lettuce because I think it tastes kind of bland without a lot of other toppings and dressings.
