3546 was my home phone number when I was a kid. 4 digits. It’s amazing how much things have changed since then.

A kitchen can be a stressful environment. Every guest is a potential food critic, and with the scope of social media these days, their critique can be out in the world within seconds. Sometimes it’s not even about the food. It can be the music that they didn’t like or overly attentive staff. To deal with that kind of shit is really, really difficult. I understand that people are spending a lot of money when they go out to eat, but sometimes it feels as though people are coming to find fault. We make mistakes. I don’t deny it. But you can tell which tables are coming out to have a good time and which are on a mission to critique anything and everything.
